Cashew Yoghurt

Ingredients
140g cashew nuts soaked overnight
1 Capsule of Udo's Choice Super 8 Microbiotic
240ml water
1 tbsp of freshly squeezed lemon juice

Toppings
1 tsp Udo's Oil
Blueberries
Raspberries
Cashew nuts
MGO Manuka Honey

Method

  1. Place the nuts in a high powered blender with the water and blend until creamy and smooth, add more water if necessary
  2. Transfer mixture to a clean glass and coer with cling film, held on wiht a rubber band
  3. Leave in a warm place to ferment for 24 hours 
  4. Stir in the contents of the Super 8 capsule 
  5. Stir in the lemon juice and before serving or keep in the fridge 
  6. Top with a drizzle of Udo's Oil, selection of fresh fruit and nuts
