Cauliflower Pizza
Ingredients
Pizza Base
1 head of cauliflower, blitzed to a rice-like consistency in food processor.
2 tbsp. ground almonds
A pinch of garlic
A pinch of salt
A pinch of pepper
A pinch of chilli flakes
1 egg
Tomato Sauce
Half a jar of passata
2 cloves of garlic, crushed
5 basil leaves, chopped
Salt and pepper to season
Toppings
Handful of Spinach
1/2 Red Pepper - chopped
1/2 yellow Pepper - finely chopped
4 cherry tomatoes - quartered
2 tbsp. feta cheese
2 tbsp. Udo's Oil
Method
- Line a baking tin with parchment paper.
- Preheat oven to 180°C.
- Blitz the cauliflower in a food processor to a rice-like consistency.
- Add in two tablespoons of ground almonds.
- Add in spices, garlic, salt and pepper.
- Beat in one egg and mix through.
- Spread mixture on baking tin and bake for 20 minutes.
- While this is cooking, prepare the tomato sauce.
- On a low heat pot, add the passata, garlic, basil and seasoning and heat for about 4 minutes.
- Remove pizza base from the oven.
- Spread the tomato sauce evenly over base.
- Add peppers, spinach and chicken.
- Add feta cheese.
- Place back in the oven and bake for a further 10-15 minutes.
- Drizzle 1-2 tablespoons of Udo's Oil over your pizza!
