Granola with Mixed Berries, Udo's Oil and Yoghurt 

Granola

Method

  1. Mix dry ingredients, apart form the stevia sweetener, in a large bowl. 

  2. Melt coconut oil over heat and mix in stevia powder. 

  3. Add this to the dry ingredients and mix well. 

  4. Transfer to a parchment lined tray and roast in oven at 140c for 45 minutes. 

  5. Stir occasionally. Allow to cool and store in a airtight container for up to 4 weeks.

Topping: 250g blueberries / raspberries, Natural yoghurt or soya or coconut versions.

To serve: Spoon granola into bow, top with berries, drizzle with Udo's Oil and natural yoghurt.

Top tip: This recipe is diabetic friendly and gluten free

Ingredients

50g quinoa flakes
2 tbsp. pumpkin seeds
2 tbsp. sunflower seeds
50g chopped hazelnuts
50g chopped almonds
50g chopped brazil nuts
1/2 - 1 tsp. ground cinnamon
3 tsp PureVia stevia sweetener
2 tbsp. coconut oil, melted

Toppings

Raspberries
Blueberries
Natural yoghurt or soya or coconut versions
Drizzle of Udo's Oil
