Avocado and Egg Brunch

Bursting with healthy omega fats, this smashed avocado and egg recipe is the prefect way to kickstart your weekend.


4 slices rye bread
2 avocados
2 tablespoons Udo's Oil 
Handful of pumpkin seeds
1 tomato, sliced
1 boiled egg, sliced
Squeeze of lemon juice
Pinch of sea salt
Black pepper


  1. Mash together the avocado, Udo's Oil, lemon, salt and pepper in a mixing bowl.

  2. Spoon the mixture evenly over the rye bread and top with a boiled egg, tomato and pumpkin seeds.

  3. Enjoy!
