Chia seeds are incredibly versatile and I just love them in this recipe. They are packed with Omega 3 fatty acid, great for energy, stamina and weight loss. And if you’re looking for something lighter than porridge during the warmer months this is just perfect.
I’m using Udo’s Oil in this recipe which gives it a nice warm tone of nuttiness. It also adds a good dose of EFA’s and is amazing for skin and hormones, which is something I’m working to keep balanced through my diet at the moment as I begin to experience peri-menopausal symptoms!"
4 tbsp Chia Seeds
150 ml / 3/4 cup Coconut Milk (or other plant-based milk)
1 sweet Apple
1-2 tbsp Maple syrup or Raw Honey
1 tbsp Udo’s Oil
1/2 – 1 tsp Cinnamon Powder
- Stir the Chia Seeds together with the Milk in the bowl and leave aside for a few minutes to soak.
- Chop the Apple into small cubes and stir this into the Chia and Milk with the other ingredients. Keep stirring until the Chia has completely soaked up all the milk and thickened.
- Taste and add more sweetener and/or Cinnamon to your liking. Serve with extra chopped Apple.
- This will store covered in the fridge for up to 3 days so is great for making a larger batch ahead.
