Ingredients for creamy sauce
6 sundried tomatoes
2 dessert spoons Sunflower Seeds (soaked for 10 minutes in water)
2 dessert spoons Udo's oil
1 dessert spoon apple cider vinegar
1 plump and ripe tomato
- Spiralise the courgette with your preferred blade setting. Place in a serving bowl and set aside.
- Drain the sunflower seeds (discard the water) and blend with the remaining ingredients (except the rosemary) in your blender.
- Pour the mixture over your chosen pasta or noodles.
- Transfer to a serving dish and sprinkle with a sprig of rosemary. Enjoy!
