Creamy Tomato Linguine


1 courgette
6 sundried tomatoes
2 dessert spoons Sunflower Seeds (soaked for 10 minutes in water)
2 dessert spoons Udo's oil
1 dessert spoon apple cider vinegar
1 plump and ripe tomato
Fresh rosemary


1. Spiralize the courgette with your preferred blade setting. Place in a serving bowl and set aside.
2. Drain the sunflower seeds (discard the water) and blend with the remaining ingredients (except the rosemary) in your personal blender.
3. Pour mixture over the noodles.
4. Transfer to a serving dish and sprinkle with a sprig of rosemary. Enjoy!
