Halloumi Avocado and Lime Salad

Serves 4



100gr/ 3.5oz halloumi

100gr/ 3.5oz lettuce, baby spinach, rocket

2 tbsp mixed seeds (pumpkin, sunflower, poppy, sesame)

1 avocado



Juice of 1 lime

1 tbsp balsamic or apple cider vinegar

2 tbsp Udos Oil

1 garlic clove minced



Slice the halloumi into thin strips. Cook on a medium/high heat pan for a few minutes on each side until golden.

Plate your greens, add the halloumi when cooked and add the seeds to the hot pan. Toast for a few minutes until done.

Cut the avocado in half and slice the flesh, then add to halloumi.

Combine all the dressing ingredients and whisk well, sprinkle the toasted seeds over the salad and drizzle the dressing over everything.
