Raw Pasta with Avocado

Raw Pasta


2 Courgette
1 Avocado
2 tablespoonYoghurt
1 tablespoon Udo's Oil
Lemon Juice
Pinch Himalayan Salt
2 Spring Onion, chopped
4 Green Geans, sliced lengthways


  1. Using a spiraliser turn the courgette into noodles and transfer to serving bowls. 

  2. Mash the avocado and yoghurt with a fork and mix in the Udo's Oil, a squeeze of lemon juice and a pinch of salt. 

  3. Spoon the mixture onto courgette base and top with spring onions and green beans.

Note: if you do not have a spiraliser you can use a veggie peeler to make pasta ribbon
