Udo’s Strawberry, Goats Cheese and Wild Rocket Salad

Goats Cheese Salad


2 Large handfuls of rocket
8 Strawberries (quartered)
150g Goats cheese
100g Pecan nuts toasted

For the Dressing
1 Tablespoon of Udo’s Oil
1 Tablespoon of Olive Oil
1 Tablespoon of Apple Cider Vinegar
1 Teaspoon of Dijon mustard
Salt to taste


  1. To make the dressing put the Udo’s Oil, Olive Oil, Apple Cider Vinegar, mustard and salt into a bowl and whisk until combined.
  2. Dress the rocket and divide it between two bowls
  3. Arrange the strawberries and goat’s cheese around the rocket and sprinkle over the pecan nuts
